SERVES 2
- 1/2 cup red rice or basmati rice
- 1/2 cup green lentils
- 1 onion, cut in cubes
- 150 g smoked haddock or hot smoked salmon in 1 piece (haddock is better)
- 1 teaspoon turmeric
- 1 lemon, zest and juice
- 1 bunch parsley, roughly chopped
- extra virgin olive oil
- salt & pepper
1. Cook the lentils in boiling water until tender, drain.
2. At the same time cook and drain the rice.
TIP:
Please do not overcook lentils nor rice, just al dente is enough, because you will be heating them 3-5 minutes more – all ingredients together!
3. Fry an onion in two spoons of olive oil in a big frying pan over a medium heat until golden-brown.
4. Pour hot rice and lentils on fried onion in the pan.
5. Sprinkle with 1 teaspoon turmeric.
6. Add the fish fillet’s flakes to the pan, cover for about 3-5 minutes until the fish is just cooked.
7. Place hot dish on a serving plate and immediately squeeze over the lemon and serve topped with lemon zest, parsley and extra virgin olive oil as much you like.
