This wild salmon dish is very refreshing and light. You can enjoy it hot or cold; for lunch or dinner. We love serving it with rice but of course you can have its lighter version: just salmon with this incredible mango and avocado salsa. An aaabsolute delight!

SERVES 1

  • 1 piece of fish (wild salmon), just right for 1 person

SALSA:

  • 1/2 mango, diced
  • 1/2 avocado, diced
  • 1 middle size ripe tomato, diced
  • 1 small red onion, diced
  • 1/4 cup coriander (cilantro), chopped
  • 1/2 small jalapeño pepper, chopped (or dried hot pepper, to taste)
  • 1 lime, juice and zest
  • 1 tablespoon extra virgin olive oil
  • salt

1. Place the salmon skin side down on the baking paper. 

2. Pour a little bit olive oil & salt over the top of the salmon piece.

3. Close the paper and put on hot frying pan and cover with a lid.

4. Cook the fish on medium heat for about 5 minutes depending on the thickness of your salmon. It is perfect when the fish meat in the thickest part is beginning to flake, but still has a little translucency in the middle.

5. Leave the fish in the paper without heating in closed pan.

6. In the meanwhile make salsa.

7. Mix all salsa ingredients together.
