This mushroom pilaf is light yet satisfying and makes great use of mushroom and rice with a touch of fresh thyme or parsley. A healthy vegetarian option for your evening meal!

SERVES 1

 

  • 1 cup brown or red rice
  • 2 cups vegan stock
  • 2 tablespoons olive oil
  • 2 cups mushrooms, chopped
  • 1 onion, finely chopped
  • 2 clove garlic, minced
  • small bunch of thyme or fresh parsley chopped
  • salt and black pepper

1. Place a large pan with 2 tablespoons of olive oil on a medium-low heat.

2. Add chopped onion and mushrooms then garlic. Stir to avoid burning.

3. Cook until liquid from mushrooms evaporates.

4. Pour vegetable stock and rice. Season with salt and pepper. Reduce heat, cover and simmer for about 25 minutes.

5. Add chopped fresh thyme or parsley.
